What happened to my white chocolate?

It's funny that you mention if it was too hot, because that was my first thought upon reading this. Cocoa er has no chocolate, it's mostly fats. It's possible that the temperature got too high and it burned the fats in your cocoa er. Vanilla extract is called for because it adds a rich, vanilla flavor without having to add tons of raw vanilla which can be pricey.
